Crumbed tofu with lupin and Chickpea Miso

Ingredients

  • 1/3 cup lupin flakes from The Lupin Co, alternatively use bread crumb
  • 1 tsp turmeric spice blend or just turmeric powder. We used our favourite Golden Grind
  • 2 tsp black sesame
  • salt and pepper
  • 1 egg, lightly whisked
  • 250g firm tofu, cut into squares
  • extra virgin olive oil
  • a pinch of alg Chickpea Miso 

Method

In a small mixing bowl, combine lupin flakes, turmeric spice blend, black sesame, salt and pepper.

Dip tofu into the egg one square then coat tofu with lupin mixture.

Heat a non stick pan with extra virgin olive oil, pan fry lupin tofu until golden (approximately 1-2 minute on each side)

Sprinkle alg Chickpea Miso before serving.

Serve as a snack with chilli sauce or as a main with salads and whole grains.
